In 1998, Karl Locher, owner of Brauerei Locher AG, asked himself how it might be possible to get hold of the aromas and beer extracts from old barrels. He had rediscovered such 60 to 120-year-old beer barrels from his ancestors almost by chance during a renovation project. Karl Locher, who is the fifth generation to run the family business, also knew that in 1999 an old law from the Second World War would be changed, which prohibited the Swiss from making a spirit from the staple food barley.

Tradition & Innovation

The beer barrels are old oak barrels that were used to transport beer to pubs until the early 1970s. The inside of the barrels was lined with a resinous layer for hygienic reasons. This was also done so that the carbon dioxide could not escape through the pores and the beer did not taste of wood. Although the barrels were regularly re-pointed, there were cracks in this resin layer and so a little beer leaked into the wooden staves again and again over the decades. The water evaporated and malt extract accumulated in the wood. It is precisely this malt extract that gives the Säntis Malt Whisky its unique note and passes on age-old beer memories. This requires interaction between the wood and the distillate. This is why the resin layer was removed and only then was the first barley distillate poured in.
