A passionate signature
Although the salamander is a real animal, it is also a creature of mythology that was supposedly able to withstand flames. In many culltures, the salamander symbolizes immortality and the mastery of fire and time. King Francis I. , who was born in Cognac, chose the salamander as his symbol, which is why it is abundantly represented at Chambord Castle, along with the motto “Nutrisco et Extinguo” (I go up in flames and put out fires). Since its foundation almost two centuries ago, Monnet has made the salamander its emblem, because the salamander ideally embodies its values: the power of existence and creation, the sacred fire and constancy. Tasting Notes
Color: Deep amber with a hint of mahogany.
Nose: The first nose blends notes of mahogany and cedar wood. This is joined by aromas of red berries, especially cherries and their pits. The whole is complemented by sweet blond tobacco and subtle scents of undergrowth. The aromatic signs of very long ageing are unmistakable here.
Palate: The attack is characterized by its roundness and develops into a very rich mid-palate, accompanied by gingerbread and cinnamon.
Finish: Long and expressive, notes of sandalwood.
