The production
With hand-forged tools, Pasote follows the venerable art of tequila making. Pasote Tequila is made from ripe blue agave from our own cultivation. After being evenly baked for two days, the agave is crushed with a roller mill before being fermented in stainless steel tanks in the open air with a proprietary blend of cultured local yeasts. Once fermentation is complete, it is carefully double distilled in stainless steel tanks with water filtered from volcanic rock from an in-house well. The result is a pure, handcrafted tequila with no added glycerin, chemicals or flavors.
Distillation
The liquid is then carefully double distilled in stainless steel stills using water filtered from volcanic rock from an in-house well. The result is pure, handcrafted tequila with no added glycerin, chemicals or flavors.
Maturation
Barrel aging in American white oak helps develop rich flavors and nuances for our Reposado and Añejo tequilas. The Reposado matures for at least 4 months, while the Añejo matures for at least 12 months….
Tequila
100% from agave
The tequila is made from ripe blue agave from our own cultivation. The agave is cut by hand with a Coa de Jima and baked evenly in a brick oven for two days before being crushed with a roller mill.
Fermentation
After baking and crushing, the agave fibers are fermented in stainless steel tanks in the open air with a proprietary blend of cultured local yeasts.
Pasote
Tequila Blanco
Rewards agave lovers with the ripe essence of the plant itself, perfectly roasted to bring out its herbaceous depth. A deeper sniff reveals fragrant undertones of fresh herbs and citrus. Completely clean and clear, with an exquisitely bright mouthfeel. Spicy notes of intense agave that combine with flavors of pineapple in the mid palate.

Tasting Notes
Nose: Rewards agave lovers with the ripe essence of the plant itself, perfectly roasted to bring out its herbaceous depth. A deeper sniff reveals fragrant undertones of fresh herbs and citrus.
Palate: Completely clean and clear, with an exquisitely bright mouthfeel. Spicy notes of intense agave are balanced by flavors of crisp and juicy pineapple in the mid-palate.
Finish: A long finish full of character. The robust yet balanced agave flavor lingers deliciously on the tongue.
Pasote Tequila Reposado
The straw yellow Reposado tequila is rich in juicy flavors thanks to barrel aging in American oak.

Tasting Notes
Nose: The distinctive herbal aroma of roasted agave is finely balanced with notes of coconut, vanilla and sweet oak.
Palate: Sweet aromas of light caramel and dried fruit lead to subtle notes of vanilla and toasted nuts.

Pasote Tequila Anejo
Aging in American oak for at least 12 months mellows its aromas and gives it rich nuances. With no added glycerin, chemicals or flavorings, the result is a pure, handcrafted tequila.

Tasting Notes
Nose: A touch confirms the lush benefits of a long aging in American oak. Soft aromas of roasted agave, pure vanilla, rich caramel and smoked nuts blend into a pleasant harmony.
Palate: The experience begins with a decadently rich mouthfeel that is velvety smooth. The long aging in the barrel softens the character of the roasted agave and brings out notes of cooked caramel, dried fruits and coffee that provide a finely nuanced complexity.
Finish: The finish is persistent and long, with a depth of sweet roasted flavors. The lush mouthfeel still lingers.
Perfect Serves
BLANCO MARGARITA
Ingredients
- 60ml Pasote Blanco Tequila
- 15ml Ferrand Dry Curaçao
- 20ml Fresh lime juice
- 20ml organic agave syrup
Preparation
Put all ingredients in a shaker, add ice, close and shakeb vigorously. Pour the contents of the shaker into a salted or tajin rimmed glass and garnish with a fresh lime wedge,
SPRING CHIQUITA
Ingredients
- 60ml Pasote Reposado
- 7ml curaçao
- 30ml blood orange juice
- 15ml lime juice
- Ginger beer
Preparation
Add Pasote Reposado, curaçao, blood orange juice and lime juice to a shaker. Add ice, cap and shake vigorously for 6-8 seconds, strain through a Hawthorne strainer into a Collins glass over ice. Top with ginger beer and garnish with a lime wheel.
